Stainless Steel

According to the dictionary, stainless steel prevents metal corrosion. The chromium included in stainless steel is a powerful oxidizing agent. By rubbing, it neutralizes in part and alters the nature of organic materials.

Components of Stainless Steel

To be classified in the stainless category, steel has to have at least 10% chromium, 17% nickel and less than 1.2% carbon. But, molybdenum and vanadium are sometimes included to increase resistance to corrosion. Nickel is a source of allergy, ” The Science Press Agency” reports that the allergies to nickel have passed from 14% in 1984 to 20% in 2003.

Chromium Compounds

Chromium compounds contain pyridinium chlorochromate and potassium dichromate, which are powerful oxidizing agents. Potassium dichromate is used for cleaning laboratory glassware to eliminate all organic materials.

Treatment – Approval

JUstenbois uses only maple wood, and all of its products are made in one piece without gluing.

Maple wood will not crack, and its grain is very tight. It has natural properties of defense against pathogenic bacteria and enters the Health Canada standards.

In 1992 Health Canada stopped approving the use of wood for food purposes as pathogenic bacteria had been discovered in restaurants serving steak on wood boards.

In 1994 the problem was identified : the washed boards never had time to dry before being reused. The fact that the wood was continuously humid and embedded with meat particles favored the development of pathogenic bacteria on the surface.

European standards

The DGCCRF has indicated that natural maple wood products, such as those produced by JUstenbois, can come in contact with food products.

Several research studies have found that stainless steel transfers accumulate in the prostate with men and in the uterus with women.
